Daytona 955i (99-01)

My 2000 Daytona has had the throttle bodies balanced, the co level set to 3.0 and has map 10071 fitted using a k&n filter with a standard pipe. I used to have stalling problems when coming to a stop with the clutch pulled in and was not able to blip the throttle on down shifts. Setting the co has stopped the stalling and you can sort of blip the throttle now, but only if you give it a big twist. Open the throttle quickly and the revs aren't instant, it has a slight hesitation. It doesn't feel sharp. Anyone have any ideas?
